Effortlessly whip up a velvety hollandaise sauce to elevate your dishes like eggs benedict, grilled salmon, and veggies.
Ingredients:
  • 3 large egg yolks
  • 1.5 tablespoons fresh lemon juice
  • 4 tablespoons unsalted butter, chilled
  • 0.75 cup unsalted butter, melted
  • salt and ground white pepper to taste
Instructions:
  • Assemble all the ingredients.
  • In a small saucepan, vigorously whisk the egg yolks until they turn a vibrant lemon yellow and slightly thicken, about 1 minute. Stir in the lemon juice until fully combined.
  • Gently add 2 tablespoons of cold butter to the egg mixture. Place the pan over low heat and whisk continuously until the butter melts and the mixture thickens enough to reveal the bottom of the pan between strokes.
  • Take the pan off the heat and slowly whisk in the rest of the cold butter, adding 1 tablespoon at a time until fully combined.
  • Gradually incorporate the melted butter into the mixture, whisking constantly.
  • Sprinkle with a pinch of salt and a dash of white pepper for the perfect balance of flavors.
