Ingredients:
  • 3 egg yolks
  • 21.00 gm lemon juice
  • 60g butter, cut into 1.5cm cubes
Instructions:
  • Combine the egg yolks and lemon juice in a heatproof bowl and whisk until smooth.
  • 1. Set a bowl over a saucepan of gently simmering water. Whisk continuously for about 3 minutes until the mixture thickens and turns pale. 2. Add 1 cube of butter and whisk until melted. 3. Repeat this process with the rest of the butter, taking around 10 minutes in total. 4. Remove from heat and season with salt and pepper to taste.
