Classic French Hollandaise sauce: creamy, rich, lemon-infused sauce perfect for eggs benedict and more. Easy to make with just butter, eggs, and lemon. A must-have recipe!
Ingredients:
  • 3 large egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup firm butter
Instructions:
  • In a small saucepan, whisk egg yolks and lemon juice vigorously. Add butter and heat over very low heat, stirring constantly until melted.
  • Stir in the remaining 1/4 cup of butter vigorously until melted and sauce thickens. Ensure the butter melts slowly to cook the eggs and thicken the sauce smoothly. If the sauce starts to separate, add around 1 tablespoon of boiling water and whisk vigorously until smooth.
  • Serve immediately for the best experience. For later use, cover and store in the refrigerator. To serve refrigerated sauce, gently reheat over low heat and add a splash of water as needed, stirring well.
