Savory vegetable beef soup with ground beef, red potatoes, corn, green beans, and carrots in a flavorful tomato-vegetable juice broth.
Ingredients:
  • 1 pound ground beef
  • 6 red potatoes, finely diced
  • 1 onion, diced
  • 5 carrots, thinly sliced
  • 1.5 cups water, divided
  • 1 (46 fluid ounce) bottle tomato-vegetable juice cocktail
  • 2 cups frozen green beans
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
Instructions:
  • In a large pot over medium heat, sauté beef, potatoes, and onions together until beef is fully cooked. Cover and simmer, stirring occasionally, until potatoes are tender, about 10-15 minutes.
  • Place the carrots and 1/2 cup of water in a microwave-safe bowl and cook on high until the carrots are tender, approximately 5 minutes.
  • Remove excess grease from the beef mixture. Combine carrots, juice cocktail, green beans, corn, remaining 1 cup water, salt, and pepper in the pot. Let it simmer gently until flavors meld and the soup is heated through, approximately 30 minutes.
