DIY Campari: Elevate cocktails like Negronis & Boulevardiers at home. Perfect gift for cocktail enthusiasts.
Ingredients:
  • 4 cups water
  • For the infusion
  • 30 grams gentian root
  • 20 grams dried lemon peel
  • 20 grams rhubarb root
  • 15 grams angelica root
  • 10 grams wormwood
  • 10 grams dried ginseng root (not powdered)
  • 10 grams wild cherry bark
  • 1 full orange peel, including pith, chopped
  • 1 full grapefruit peel, including pith, chopped
  • 1 liter 150-proof or higher clear spirit, such as Galen’s 151 or Everclear Grain Alcohol 151
  • For the simple syrup and finishing
  • 2 1/3 (474g) cups sugar
  • Liquid red food coloring, as needed
Instructions:
  • Mix together the dry ingredients for the infusion, ensuring they are well combined. Divide the mixture evenly between two 1-quart (32oz) mason jars. Pour an equal amount of alcohol into each jar. If you prefer, you can use a larger jar instead. Seal the jars tightly and shake well.
  • Infuse for 2 weeks: Shake the jar daily to develop a rich, bittersweet flavor as it turns a deep shade of brown.
  • Strain the infused mixture through a sieve, followed by filtering through cheesecloth, a coffee filter, or a mesh superbag.
  • Prepare a simple syrup by dissolving sugar in simmering water. Allow it to cool completely. Slowly mix the simple syrup into the infused Campari to sweeten and adjust the alcohol content.
  • Enhance the color: If you prefer a brighter hue or desire a color similar to store-bought Campari, add red food coloring until you achieve the familiar vibrant rosy shade.
  • Transfer your Campari to a clean bottle or jar, store it away from direct sunlight in a cool, dry place. Campari remains safe to enjoy even if stored in light for over a year, though oxidization and evaporation may cause minor changes in taste.
