Transform cloudy homemade Campari with milk washing technique for a crystal-clear, elevated result.
Ingredients:
  • 1 (2-liter) batch homemade Campari (cloudy or not)
  • Lemon juice, as needed
  • A little over 2 cups whole milk, or as needed
  • Red food coloring, as needed
Instructions:
  • Sip the Campari to assess its flavor profile: Is it too strong or just right? Remember to compare it to the final taste later on.
  • Combine 1 cup of Campari with 4 teaspoons of lemon juice in a large bowl or pitcher. Stir well.
  • Pour 1 cup of whole milk for every 4 cups of Campari into a large bowl or pitcher that can hold at least 10 cups, ensuring to use whole milk, not skim or low-fat.
  • Carefully drizzle the Campari into the milk while savoring the process. Watch as small curds start to form - yes, it might not look the prettiest, but trust me, this is exactly what you want. Stay the course!
  • Allow the curds to rest: Gently stir once, then leave them untouched in the bowl for 1 hour.
  • Strain gently: Line a colander or fine mesh strainer with a giant coffee filter or double layer of cheesecloth over a clean, large bowl (a conical strainer works best, if available). Carefully pour the curdled mixture into the prepared strainer without disturbing the curds. Allow it to strain for about 1 hour or longer until the Campari appears crystal clear, with some small curds possibly at the bottom. If it's still cloudy, strain it again through the curds or try a coffee filter for a finer strain.
  • Enhance the appearance by discarding the curds and adding more red food coloring to your clarified Campari, if desired. Note that some of the color might be retained in the discarded curds.
