Quick and simple homemade caramel sauce in 10 minutes with just sugar, butter, and cream. Perfect for ice cream, brownies, or coffee.
Ingredients:
  • 1 cup (210g) of sugar
  • 6 tablespoons (85g) butter (salted or unsalted)
  • 1/2 cup (120ml) heavy whipping cream
Instructions:
  • Prepare all the ingredients: Place the cream and butter beside the pan for easy access. Speed is essential when making caramel, so ensure all ingredients are within reach to prevent burning the sugar. For safety, keep children away and consider using oven mitts due to the extremely high temperature of caramelized sugar.
  • Caramelize the sugar: Heat sugar over moderate to high heat in a heavy-bottomed 2-quart or 3-quart saucepan. Stir vigorously as the sugar melts and begins to caramelize at the edges. Reduce heat to prevent burning. Once all sugar has melted, stop stirring and swirl the pan gently.
  • Introduce the butter: Once the sugar has turned a medium amber liquid, swiftly incorporate the butter into the pan. Stir until the butter has fully melted.
  • After melting the butter, remove the pan from the heat, then gently pour in the cream while whisking constantly to blend smoothly. Be prepared for foaming as you combine the butter and cream. Use a pan that can hold at least 2 to 3 quarts.
  • Whisk until smooth: Whisk caramel sauce until smooth. Allow to cool for a couple minutes, then transfer to a glass mason jar to cool to room temperature. Remember to use pot holders when handling the hot jar. Refrigerate for up to 2 weeks. Reheat in microwave in 30-second intervals until warm and pourable, or heat in a double boiler until warm.
