Indulgent homemade salted chocolate caramels make the perfect gift.
Ingredients:
  • 1 cup white sugar
  • 1 cup heavy whipping cream, divided
  • 0.75 cup light corn syrup
  • 0.5 cup butter
  • 0.5 teaspoon vanilla extract
  • 1.25 cups 60% cacao dark chocolate chips
  • 0.75 cup semisweet chocolate chips
  • 2 tablespoons shortening
  • 1 tablespoon sea salt
Instructions:
  • Prepare an 8-inch square baking pan by greasing it with butter.
  • In a saucepan, mix white sugar, 1/2 cup cream, corn syrup, and butter. Heat over medium heat until boiling, stirring frequently. Add the rest of the cream. Let it cook without stirring until it reaches 242°F (117°C) or forms a pliable ball in cold water. Take it off the heat and stir in the vanilla.
  • Transfer the luscious caramel mixture into the lined baking pan. Let it cool for a bit, then wrap it with plastic and refrigerate for at least 8 hours or overnight.
  • Take out the baking pan from the refrigerator and let the caramel mixture come to room temperature for approximately 30 minutes. Then, cover a baking sheet with waxed paper.
  • In a microwave-safe glass or ceramic bowl, melt dark and semisweet chocolate chips with shortening in 30-second intervals, stirring each time, until smooth, approximately 1 1/2 minutes total.
  • Cut the caramel into 1-inch squares, then coat them in melted chocolate, allowing any extra chocolate to drip off. Transfer the squares to the baking sheet and sprinkle with sea salt. Refrigerate until firm, approximately 1 hour.
