Hazelnut-Coffee Caramels

Elevate homemade caramels with a rich blend of coffee and hazelnut flavors.
Ingredients:
  • 1/2 cup chopped hazelnuts (filberts)
  • 3/4 cup butter or margarine
  • 2 cups packed brown sugar
  • 1 cup corn syrup
  • 2 tablespoons instant espresso coffee (dry)
  • 1 tablespoon hazelnut syrup (coffee flavoring)
  • 1 can (14 oz) sweetened condensed milk (not evaporated)
  • Chocolate-covered coffee beans, if desired
Instructions:
  • Prepare an 8-inch square pan by lining it with foil, ensuring there is a 1-inch overhang on two opposite sides. Butter the foil on the bottom and sides of the pan, then evenly spread the hazelnuts in the pan.
  • In a large 3-quart saucepan, combine butter, brown sugar, corn syrup, dry coffee, hazelnut syrup, and milk. Bring the mixture to a boil over medium heat, stirring frequently. Cook until it reaches 245°F on a candy thermometer or forms a firm ball in cold water. Pour the mixture into a pan and let it cool completely for about 2 hours.
  • Lift the mixture from the pan using the foil edges. Cut into 8 by 6 rows, separating the caramels as you cut. Garnish with coffee beans and wrap each piece individually in plastic wrap or waxed paper.
