Ingredients:
  • 0.25 cup white sugar
  • 2.25 teaspoons quick-rise yeast
  • 1.75 cups gluten-free all-purpose flour
  • 2.5 teaspoons baking powder
  • 1.5 teaspoons xanthan gum
  • 0.5 teaspoon salt
  • 0.66666668653488 cup milk
  • 1 tablespoon unsalted butter
  • 0.25 cup olive oil
  • 2 tablespoons gluten-free all-purpose flour, or as needed
  • 0.5 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 0.33333334326744 cup unsalted butter, melted
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons cream cheese, softened
  • 0.75 cup powdered sugar
  • 0.5 tablespoon lemon juice
  • 1 dash salt
Instructions:
  • In a small bowl, harmonize sugar and yeast. In a separate bowl, blend flour, baking powder, xanthan gum, baking soda, and salt.
  • Microwave the milk and butter in a bowl until it reaches 110 to 115 degrees F (43 to 46 degrees C), stirring every 15 seconds, for about 45 seconds. Whisk this mixture into the yeast mixture and let it proof for about 5 minutes.
  • In a large bowl, mix together proofed yeast, olive oil, egg, and vanilla extract. Slowly incorporate the flour mixture while mixing with an electric mixer on medium-high speed until the dough thickens and becomes less sticky, which should take about 1 1/2 minutes.
  • Prepare your work surface by laying down plastic wrap and sprinkling a touch of flour on top. Put the dough in the middle, add a sprinkle of flour, and cover it with another sheet of plastic wrap. Roll it out into a 10x13-inch rectangle and carefully peel off the top layer of plastic wrap.
  • Prepare the filling by mixing brown sugar and cinnamon in a small bowl. Spread melted butter over the dough and evenly sprinkle the brown sugar mixture on top.
  • Roll the dough up tightly like a jelly roll, gently using the plastic wrap to assist you. Dust the dough with a little more flour and slice it into 10 pieces using a sharp knife. Arrange the rolls in a greased baking dish, cover them with plastic wrap, and let them rise in a warm spot for 15 minutes.
  • Preheat the oven to 350°F (175°C) for the perfect cooking temperature.
  • Bake rolls in the oven until tops are beautifully golden brown, for about 22 to 27 minutes.
  • Prepare the perfect frosting: In a mixing bowl, beat together smooth butter and cream cheese. Add powdered sugar and continue mixing until smooth. Incorporate lemon juice, vanilla extract, and salt for a burst of flavor.
  • Once the cinnamon rolls are out of the oven, promptly drizzle the frosting over the top.
