Indulge in delicious homemade muffins with this simple recipe.
Ingredients:
  • 375.00 gm gluten-free self-raising flour
  • 5.00 gm ground cinnamon
  • 135.00 gm firmly packed brown sugar
  • 257.50 gm milk
  • 115.00 gm vegetable oil
  • 1 egg, lightly beaten
  • 2 small pink lady apples
  • Warmed honey, to serve (optional)
Instructions:
  • Preheat your oven to 190°C/170°C fan-forced and grease a 12-hole muffin pan with 1/3 cup capacity.
  • In a bowl, mix flour, cinnamon, and 2/3 cup of brown sugar. Create a well in the center and add milk, oil, and egg. Stir with a wooden spoon until just combined. Peel and grate 1 apple, then fold it into the muffin mixture. Spoon the batter into the prepared pan.
  • Core and quarter the apple, then thinly slice it. Place 2 to 3 apple slices on top of each muffin. Sprinkle with the rest of the brown sugar. Bake for 20 to 25 minutes until golden and cooked. Allow to cool in the pan for 5 minutes, then transfer to a wire rack. Serve with a drizzle of honey, if desired.
