Versatile homemade enchilada sauce perfect for casseroles, burritos, and tacos. Easy to make!
Ingredients:
  • 8 cups water
  • 2 tomatoes, halved
  • 12 jalapeno peppers, stems removed
  • 1 large white onion, quartered
  • 10 tomatillos, halved
  • 8 serrano peppers, stems removed
  • 6 cloves garlic, peeled
Instructions:
  • In a large pot, mix water, tomatoes, jalapenos, onion, tomatillos, serrano peppers, and garlic. Bring to a boil, then simmer until vegetables are tender when pierced with a fork, approximately 30 minutes.
  • Scoop the vegetables into a blender using a slotted spoon, letting the juices drip back into the pot. Secure the lid and pulse briefly to mix. Blend until creamy for 1 to 2 minutes. Season the sauce with salt and pepper.
