Delicious and simple breakfast hash browns: mashed potatoes mixed with egg, onion, and spices, fried until crispy.
Ingredients:
  • 1 large egg, beaten
  • 2 cups mashed potatoes
  • 1 onion, finely diced
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 tablespoons olive oil
Instructions:
  • In a medium mixing bowl, whisk the egg and combine with mashed potatoes and onion. Season generously with salt and pepper.
  • In a medium frying pan over medium heat, swirl olive oil. Shape potato mixture into 4-inch circles, then gently press with a spatula to reach 1/2 to 1 inch thickness.
  • Brown the bottom of the patty, then flip and brown the other side.
