Homemade lollipops

Ingredients:
  • 225.00 gm white sugar
  • 14.00 gm glucose syrup (see note)
  • 62.50 gm water
  • 1 to 2 drops food colouring of choice
Instructions:
  • Prepare two spacious baking trays by lining them with parchment paper. Chill in the refrigerator until you're prepared to utilize them.
  • In a small saucepan, mix sugar, glucose syrup, and water. Heat gently while stirring with a wooden spoon until the sugar dissolves. Increase heat to medium-high and bring to a boil without stirring.
  • Stir in food colouring. Lower heat to a simmer and cook gently for 12 minutes or until the mixture reaches the desired temperature. Test the temperature by dropping a small amount of the mixture into cold water. Let it cool, and check if the toffee reaches a brittle consistency (149°C to 154°C on a sugar thermometer). If not, keep cooking and testing until it reaches the desired consistency. Remove the saucepan from the heat.
  • Retrieve baking trays from fridge. Spoon out dollops of toffee onto the trays. Gently insert a lollipop stick into the center of each toffee circle while it's still warm and tender. Act swiftly before the toffee hardens.
