Savory dumplings filled with seasoned meat in egg pasta, served with garlic yogurt sauce and spicy oil.
Ingredients:
  • 2 cups all-purpose flour, plus more for dusting
  • 0.5 teaspoon salt
  • 2 large eggs
  • 0.5 teaspoon water, or as needed
  • 2 onions, peeled
  • 0.5 pound ground beef
  • salt and pepper to taste
  • 3 tablespoons vegetable oil
  • 1 tablespoon red pepper flakes
  • 1 (8 ounce) container plain yogurt
  • 1 tablespoon minced garlic
Instructions:
  • Prepare the dough: In a large bowl, mix the flour and salt together. Incorporate the eggs and water, ensuring thorough mixing using your hands. If necessary, add extra water to achieve a soft dough consistency. Cover the dough and let it rest for a minimum of 30 minutes.
  • Prepare the filling by shredding onions and draining them in a colander over a bowl. Discard the juice. Mix the drained onions with ground beef, salt, and pepper in a medium bowl until well combined. Set the filling aside.
  • Dust a work surface and a large plate with a light coating of flour.
  • Divide the dough in half, then work with one piece at a time and roll it out on a floured surface into a thin rectangle. Cut the dough into 2-inch squares using a knife or pastry wheel.
  • Add a generous 2 teaspoons of filling to the center of each square. Seal the edges of the dough by gathering and pinching them at the top to create a bundle. Place the manti on the prepared plate and sprinkle a little more flour on top to avoid sticking.
  • Infuse oil: Warm oil and red pepper flakes in a small skillet over low heat until flakes slightly color the oil. Set aside, keeping warm.
  • Create a flavorful sauce by combining yogurt and garlic in a small bowl; set aside for later use.
  • Bring a large pot of salted water to a boil. Cook manti until filling is cooked through and dough is tender, for about 20-25 minutes. Drain well.
  • Plate the manti evenly onto 4 plates and generously spoon the creamy yogurt sauce over them. Finish by delicately drizzling the pepper oil on top for a burst of flavor.
