Homemade mayonnaise

Delicious homemade recipe, not tested by taste.com.au team.
Ingredients:
  • 2 egg yolks
  • 5.90 gm mustard
  • 150ml vegetable oil
  • 1 tsp white vinegar
  • 1.20 gm sea salt
  • 2 tsp chopped dill (optional)
  • 2 tsp chopped chives (optional)
  • 20.00 ml finely chopped gherkin (optional)
  • 10.00 ml finely chopped anchovies (optional)
Instructions:
  • In a clean bowl, vigorously whisk together the egg yolks and mustard for 30 seconds. Slowly drizzle in the oil a few drops at a time while whisking continuously until the mixture thickens and resembles store-bought mayo.
  • Once you've incorporated 80 mls of oil into the yolks, pour in the vinegar and keep whisking. This will give your mayo a beautiful light hue. Season with 1/2 tsp of salt and gradually drizzle in the remaining oil while whisking constantly.
  • Enhance your basic mayonnaise by incorporating a variety of ingredients like fresh herbs, anchovies, gherkins, Spanish onion, or garlic. The options for customization are limitless.
