Ingredients:
  • 2 egg yolks
  • 42.00 gm lemon juice
  • 11.80 gm Dijon mustard
  • 227.50 gm olive oil
Instructions:
  • In a bowl, whisk together egg yolks, lemon juice, and Dijon mustard. Slowly drizzle in 1/4 cup of olive oil, whisking continuously to prevent the mixture from splitting.
  • Slowly drizzle an additional 3/4 cup of olive oil while whisking continuously until the mixture is thick and pale. Take your time with this step for a velvety smooth mayo. Season to taste.
