Create homemade mozzarella cheese using simple steps to turn whole milk into fresh, delicious cheese.
Ingredients:
  • 0.75 cup cool water, divided
  • 1/4 teaspoon liquid rennet
  • 1.5 teaspoons citric acid
  • 1 gallon raw milk
  • 1 teaspoon salt
Instructions:
  • Mix the rennet with 1/4 cup of water in a small bowl until well combined.
  • In a separate small bowl, blend 1/2 cup water with citric acid until fully dissolved.
  • Combine milk and citric acid mixture in a large pot on medium heat, stirring gently.
  • Gently warm the milk, stirring occasionally, until it reaches 90 degrees F (32 degrees C) on an instant-read thermometer, approximately 5 minutes.
  • Take the milk off the heat and gently swirl in the rennet mixture in a figure-8 motion for 30 seconds. Stir in a counterclockwise direction for another 30 seconds to stabilize the milk. Cover and allow the milk to set and form curd for 5 to 10 minutes. Test for firmness by gently pressing the edge of the curd with a palette knife or the back of a spoon.
  • Using a palette knife, delicately slice vertically in the pot to create 3/4-inch curd cubes. Gently stir the curds, ensuring the cubes are mostly preserved.
  • Put the pot back on the heat and stir the curds gently until the temperature reaches 109 degrees F (43 degrees C), about 5 minutes. Take the pot off the heat.
  • Using a slotted spoon, transfer the curds into a colander placed over a large bowl. Gently press the curds to remove excess liquid whey, then return the drained whey to the pot.
  • Warm the whey to 185 degrees F (85 degrees C) for approximately 5 minutes. With protective gloves on, take a portion of the curd and place it on a slotted spoon. Submerge the curd in the hot whey for 5 to 10 seconds. Stretch, fold, and knead the curd until it becomes smooth and elastic. Add salt and shape the curd into a ball. Repeat the dipping and kneading process with the rest of the curd.
  • Cool the mozzarella until it reaches room temperature, then wrap it tightly in plastic wrap and place it in the refrigerator.
