Homemade Nocino Walnut Liqueur

Make nocino: Spicy, sweet Italian walnut liqueur from green walnuts. Perfect gift.
Ingredients:
  • 30 green English walnuts, early enough in the season so that they are easily cut with a knife
  • 2 cinnamon sticks
  • 5 whole cloves
  • 1-inch piece of vanilla bean
  • Zest one lemon, cut into strips using a vegetable peeler
  • 2 1/2 cups granulated sugar
  • 1 liter vodka
Instructions:
  • Prepare the green walnuts by rinsing and drying them, then carefully quarter them with a sharp knife or cleaver. Be cautious, especially if the walnuts are late season and the shells are hardening. Keep an eye on your fingers.
  • Combine walnuts, spices, zest, sugar, and vodka in a large glass container. Ensure the vodka completely covers the walnuts. Seal the container and shake vigorously to thoroughly mix.
  • Let the mixture infuse for 6 weeks, shaking it daily. Watch as the nocino gradually deepens in color each day.
  • To bottle the nocino, remove the walnuts and solids with a slotted metal spoon, being mindful of potential staining. Strain the liquid through cheesecloth into glass bottles. Coffee filters can also be used. Seal tightly with corks and store in a cool, dry place. Allow nocino to mature for at least a year for optimal flavor.
