Homemade Ramp Mayonnaise

Delicious homemade garlicky ramps mayonnaise, perfect for sandwiches, fish, or dipping.
Ingredients:
  • 1 large egg
  • 2 large egg yolks
  • 0.75 cup light olive oil
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lemon juice, or more to taste
  • minced ramps, to taste
Instructions:
  • In a food processor, blend together the egg, egg yolk, light olive oil, and extra virgin olive oil until a thick and creamy mixture forms. Stir in lemon juice and salt.
  • Place the mayonnaise in a small bowl and mix in the ramps. Transfer the mixture into a jar with a lid and refrigerate until ready to serve.
