Homemade Red Pasta Dough

Elevate your pasta with a touch of vibrant tomato paste for a rich flavor and beautiful red color. Perfect for tagliatelle, lasagna, or ravioli.
Ingredients:
  • 2.5 cups Italian tipo "00" flour, or more to taste
  • 3 large eggs
  • 1.5 tablespoons tomato paste
  • 1 tablespoon water, or as needed
Instructions:
  • Start by laying out the flour on a marble or wooden surface. Create a well in the middle and add eggs, salt, and tomato paste. Lightly whisk the eggs with a fork, gradually pulling in the flour until a runny batter forms. Use a bench scraper to blend in the rest of the flour until a dough ball forms. Add water, 1 tablespoon at a time, if the dough is too stiff.
  • Shape the dough by flattening the ball, stretching it, and folding the top towards the center. Rotate the dough by 45 degrees and continue these steps until the dough is soft and smooth, approximately 10 minutes.
  • Form the dough into a ball, then transfer it to a bowl and cover with plastic wrap. Chill in the refrigerator until firm, for 30 minutes to 1 hour.
  • Use a pasta machine or rolling pin to flatten the dough and shape it into your preferred pasta style.
