Spicy cinnamon rock candy, a festive holiday treat for gifting or as stocking stuffers.
Ingredients:
  • 1 cup confectioners' sugar
  • 3.75 cups white sugar
  • 1.5 cups light corn syrup
  • 1 cup water
  • 2 teaspoons cinnamon oil
  • 1 teaspoon red food coloring
Instructions:
  • Create a raised edge by rolling the sides of two 16-inch heavy-duty aluminum foil squares. Sprinkle each square generously with confectioners' sugar.
  • In a large, heavy saucepan over medium-high heat, stir together sugar, corn syrup, and water until sugar dissolves and mixture boils, about 5 minutes. Let it come to a temperature of 300 to 310 degrees F (149 to 154 degrees C) on a candy thermometer without stirring, for about 25 minutes.
  • Once the mixture is off the heat, gently swirl in fragrant cinnamon oil and vibrant food coloring. Pour the warm mixture onto the prepared foil, then let it cool and set for approximately 45 minutes. Break the now-hardened candy into delightful pieces to enjoy.
