Try this easy and delicious homemade German spätzle recipe with no special equipment needed.
Ingredients:
  • For the spaetzle
  • 3 1/4 cups (400g) all-purpose flour, plus more as needed
  • 3/4 cup (100g) semolina flour
  • 1 teaspoon kosher salt, plus more for the pasta water
  • 5 large eggs
  • 1 cup water, plus more as needed
  • To serve
  • 4 tablespoons salted butter
  • Freshly ground black pepper, to taste
  • 3 tablespoons roughly chopped parsley, optional
Instructions:
  • Combine the flour, semolina, and salt in a large bowl using a wooden spoon.
  • Combine the wet ingredients: Create a well in the center of the bowl and gently crack the eggs, breaking up each yolk with a spoon. Gradually blend in the flour from the edges. Pour in the water and vigorously mix until a thick, sticky dough forms. Look for the dough to tear near the bowl's edges and break apart as you lift the spoon. Adjust with a touch more flour or water if necessary. Cover with a clean towel and set aside before boiling the spaetzle.
  • Cook the spaetzle: Bring a large pot of salted water to a boil. Prepare a bowl of cold water if not serving immediately. Place a cheese grater over the pot, smooth side up. Spoon 1/2 cup of dough onto the grater and push through with a wooden spoon into the water. Cook until spaetzle float (about 1 minute), then remove with a slotted spoon. Transfer to cold water to store or a bowl to serve. Repeat with remaining dough.
  • To finish and serve the spaetzle, melt salted butter in a large frying pan over medium heat. Add the cooked spaetzle and toss to coat. For a crisp texture, sauté for about 8 minutes. Season with black pepper, sprinkle with parsley, and serve. Store boiled spaetzle in an airtight container for up to 5 days.
