Indulge in homemade Thin Mints inspired by the classic Girl Scout cookies.
Ingredients:
  • 0.5 cup butter, softened
  • 0.5 cup sugar
  • 1 large egg yolk
  • 0.5 teaspoon peppermint extract
  • 1 cup flour
  • 0.25 cup unsweetened cocoa powder
  • 8 ounces semisweet chocolate, chopped
  • 8 ounces dark chocolate candy melts
Instructions:
  • In a large bowl, use an electric mixer to beat butter for about 30 seconds at medium speed. Add sugar and salt, continue beating until combined. Mix in egg yolk and peppermint extract, then add flour and cocoa, continuing to beat. Shape the dough into a 6-inch roll, wrap in plastic wrap or wax paper, and chill until firm enough to slice for about 2 hours, or freeze for about 1 hour.
  • Preheat the oven to 375°F (190°C) for the perfect cooking temperature.
  • Slice the roll into thin 1/8- to 1/4-inch slices and place them 2 inches apart on a baking sheet without greasing it.
  • Bake in the oven until edges are firm, about 7-8 minutes. Allow to cool on the baking sheet on a wire rack before removing (cookies are fragile when hot).
  • In a small bowl, microwave semisweet chocolate and candy melts, stirring twice, until melted and smooth, for 1 to 2 minutes.
  • Coat each cookie in melted chocolate, letting the extra drip off. Place on trays lined with wax paper and refrigerate until firm.
