Flavorful slow-cooked vegetable beef soup made with tomato-vegetable juice for a delicious twist.
Ingredients:
  • 2 (14 ounce) cans beef broth
  • 1.5 pounds beef stew meat, cut into 1/2-inch cubes
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can green beans, drained
  • 1 (14.5 ounce) can tomato sauce
  • 1 (6 ounce) can tomato paste
  • 1 (46 fluid ounce) bottle tomato-vegetable juice cocktail (such as V8®)
  • 0.25 teaspoon garlic powder, or to taste
  • 0.25 tablespoon onion powder, or to taste
  • salt and ground black pepper, to taste
Instructions:
  • Prepare all ingredients.
  • Combine flavorful beef broth with succulent beef stew meat in a generously sized pot over medium heat. Allow the mixture to gently simmer, then lower the heat and continue to simmer until the beef becomes wonderfully tender, approximately 45 minutes.
  • Combine corn, green beans, tomato sauce, and tomato paste with the beef, stirring gently until well mixed.
  • Pour the lively tomato-vegetable juice into the pot, generously season with garlic powder, onion powder, salt, and pepper. Feel the flavors mingle as you bring the mixture to a boil, then simmer gently on low heat for 5 hours.
