Honey and cinnamon pineapple

Elevate pineapple with sweet honey and spices.
Ingredients:
  • 1/2 (about 700g) ripe pineapple, peeled, halved, cored, cut into thick wedges
  • 32.00 gm brown sugar
  • 1.25 gm ground cinnamon
  • 57.20 gm honey
  • 25g (1/4 cup) flaked almonds
  • 8 small scoops light vanilla ice-cream, to serve
Instructions:
  • Preheat your oven to 200°C. Place pineapple in a medium glass or ceramic ovenproof baking dish. Sprinkle with sugar, cinnamon, and drizzle with honey.
  • Bake until the pineapple turns golden and the syrup starts bubbling, for about 20-25 minutes in a preheated oven. Remove from the oven.
  • Heat a small frying pan over medium heat while you swirl in the almonds and stir until they are toasted, which should take about 2 minutes.
  • Scoop the ice-cream into serving bowls and layer with pineapples. Pour the delicious juices from the baking dish over the top and sprinkle with toasted almonds. Serve right away for a delightful treat.
