Indulge your sweet craving with this honey-sweetened fruity dessert.
Ingredients:
  • 375g block frozen puff pastry, thawed
  • 2 x 125g punnets blueberries
  • Micro coriander, to serve (optional)
  • 6 eggs
  • Juice of 2 lemons, zest finely grated
  • 115g honey
  • 250ml coconut oil
Instructions:
  • To make the lemon curd, combine all ingredients in a saucepan set over low heat. Whisk continuously for 2-3 minutes until the mixture thickens. Remove from heat and let it cool down. Refrigerate for 1-2 hours to enhance the thickness.
  • Roll the pastry into a 15cm x 30cm rectangle. Place on a baking paper-lined baking tray and prick all over with a fork. Cover with another sheet of baking paper and a baking tray, then bake at 180C for 15 minutes until crisp and golden. Cool before using.
  • Cover pastry with creamy curd and generously sprinkle with plump blueberries. Finish with a drizzle of extra honey and a touch of fresh micro coriander, if desired, for a delightful presentation.
