Ingredients:
  • 100g blanched almonds, roasted
  • 100g hazelnuts, roasted
  • 100g walnut halves
  • 175g pkt diced dried apricots
  • 165.00 ml plain flour
  • 20.00 gm cocoa powder
  • 185ml honey
  • 115g caster sugar
Instructions:
  • Prepare two 7.5cm x 25cm bar pans by lining them with non-stick baking paper. Mix together 100g blanched almonds (roasted), 100g hazelnuts (roasted), 100g walnut halves, 175g diced dried apricots, 2/3 cup plain flour, and 2 tablespoons cocoa powder.
  • Combine 3/4 cup (185ml) honey and 1/2 cup (115g) caster sugar in a saucepan over low heat until dissolved. Boil for 3-5 minutes until a spoonful of the mixture forms a soft ball in chilled water. Pour over nuts and mix well.
  • Divide the mixture into the pans evenly. Gently press down using a wet hand. Bake for 30-35 minutes until golden brown. Allow it to cool fully before slicing and serving.
