Honey barbecued chicken

Kid-friendly side dish recipe. Perfect for little chefs.
Ingredients:
  • 20.00 ml finely grated lemon rind
  • 57.20 gm honey
  • 11.80 gm dijon mustard
  • 70.63 gm barbecue sauce
  • 8 (120g each) skinless chicken thigh cutlets
Instructions:
  • Preheat your oven to a high 220°C/200°C fan-forced. Line a baking tray with parchment paper and add a wire rack on top.
  • In a large bowl, mix together lemon rind, honey, garlic, mustard, and barbecue sauce. Add chicken and coat well. Transfer the chicken to a wire rack and drizzle with the remaining marinade. Bake for 35 to 40 minutes, basting with pan juices every 10 minutes, until golden and fully cooked. Serve with Crunchy coleslaw.
