Honey Cake I

Traditional German cake that gets better with time. Bake in advance for maximum flavor development.
Ingredients:
  • 4 eggs, separated
  • 1 cup honey
  • 0.33329999446869 cup vegetable oil
  • 3 cups all-purpose flour
  • 0.5 teaspoon ground cloves
  • 0.5 teaspoon ground allspice
  • 3 teaspoons instant coffee granules
  • 1 cup hot water
Instructions:
  • Combine the coffee with hot water, then allow it to cool.
  • Combine yolks and sugar in a large bowl, beating until creamy. Mix in the oil and honey separately, beating after each addition until smooth and creamy.
  • Sift 3 cups of flour and combine with salt, baking powder, baking soda, and spices. Alternate adding these dry ingredients with coffee to the honey mixture, stirring just until blended. Avoid overmixing.
  • Whisk the egg whites until they form stiff peaks. Gently fold them into the batter in three additions. Pour the batter into two greased 8-inch square pans.
  • Bake at 325°F (165°C) for 35-40 minutes or until a toothpick inserted into the center comes out clean.
