Baked chicken and mushrooms with a sweet and tangy honey mustard curry glaze.
Ingredients:
  • 18 cut up chicken pieces
  • 0.25 cup prepared mustard
  • 1 cup honey
  • 3 tablespoons curry powder
  • 2 (4.5 ounce) cans mushrooms, drained
  • 1 (4.5 ounce) can mushrooms, drained, liquid reserved
Instructions:
  • Preheat oven to a toasty 300 degrees F (150 degrees C).
  • Place chicken pieces in a 9x13 inch baking dish. Combine mustard, honey, and curry powder in a microwave-safe bowl. Microwave for 1 minute on HIGH. Stir in mushrooms, then pour over chicken. Bake in a preheated oven for 45 to 50 minutes until chicken is cooked and juices run clear. Flip chicken halfway through baking for even cooking. Chicken should have a lovely golden brown color when done.
