Delicious meatballs spiced with honey and harissa for a perfect balance of sweet and spicy flavors. Harissa is a North African chili paste that adds a delicious kick. Easy homemade harissa recipe in 10 minutes. Serve with tangy lemon rice for a flavorful meal.
Ingredients:
  • 500g lamb mince
  • 3 garlic cloves, crushed
  • 30.00 ml chopped fresh mint
  • 3 tsp harissa
  • 1 small red onion, finely chopped
  • 36.40 gm olive oil, plus extra, to serve
  • 450g pkt microwave brown rice
  • 62.50 ml chopped fresh continental parsley leaves, plus extra leaves, to serve
  • 1 lemon, rind finely grated, juiced
  • 80ml (1/3 cup) honey
  • 1 tsp apple cider vinegar
  • 350g (1 1/3 cups) thick Greek yoghurt
  • Lemon wedges, to serve
Instructions:
  • Mix together the lamb, garlic, mint, 1 tsp harissa, and half of the onion in a bowl, then shape the mixture into 16 balls using a tablespoon.
  • In a large frying pan over medium heat, heat half of the oil. Cook the meatballs for 10 minutes, turning occasionally, until cooked through. Drain the pan, leaving around 1 tbsp of oil.
  • 1. Microwave the rice following packet instructions, then transfer it to a large bowl. 2. Add parsley, lemon zest and juice, and the rest of the onion and oil. Mix well. 3. Combine honey, vinegar, and remaining harissa in a jug.
  • Drizzle half of the honey mixture over the meatballs and cook over medium heat for 3-4 minutes until the sauce slightly caramelizes. Spread yogurt on each serving plate, then drizzle with the rest of the honey mixture and extra oil. Top with rice, meatballs, and garnish with extra parsley. Serve with lemon wedges.
