Honey mustard chicken tenders

Ingredients:
  • 82.50 ml diced almonds
  • 165.00 ml dried multigrain breadcrumbs
  • 600g chicken tenderloin
  • 36.80 gm rice bran oil
  • mixed salad leaves, to serve
  • 23.40 gm dijon mustard
  • 57.20 gm honey
  • 20.00 ml white wine vinegar
Instructions:
  • In a bowl, mix together the almonds and breadcrumbs. Coat each tenderloin in the breadcrumb mixture and place on a plate. Repeat for the remaining tenderloins.
  • In a large frying pan over medium-high heat, sear tenderloins for 3 to 4 minutes on each side until they turn golden and are cooked through.
  • Prepare the Honey mustard dressing by combining mustard, honey, and vinegar in a jar. Shake well to mix. Plate the chicken and salad leaves, then drizzle with the dressing before serving.
