Honey mustard baked chicken tenders with a cheesy, zesty crust.
Ingredients:
  • cooking spray
  • 0.33333334326744 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon ground black pepper
  • 0.66666668653488 cup grainy Dijon mustard
  • 0.25 cup honey
  • 0.25 cup egg substitute
  • 1 teaspoon hot sauce, or to taste
  • 1 cup cornflake crumbs
  • 0.5 cup panko bread crumbs
  • 1 tablespoon minced onion flakes
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon cayenne pepper, or to taste
  • 1.5 pounds boneless, skinless chicken breast tenders
Instructions:
  • Preheat the oven to 375°F (190°C). Line a baking dish with a cooking rack and coat both with cooking spray.
  • Mix together flour, garlic powder, and pepper in a dish until well combined. In a separate bowl, combine mustard, honey, egg substitute, and hot sauce, stirring until blended.
  • In a separate shallow dish, mix cornflake crumbs, bread crumbs, Parmesan cheese, onion flakes, garlic powder, pepper, paprika, onion powder, Italian seasoning, and cayenne pepper together until well blended.
  • Coat chicken tenders in flour, dip in egg, then coat with bread crumbs evenly.
  • Lay the chicken on the prepared cooking rack and generously coat it with cooking spray.
  • Roast chicken in the preheated oven until fully cooked and juices run clear, approximately 25 minutes. Ensure chicken reaches an internal temperature of at least 165°F (74°C) with an instant-read thermometer.
