Honey mustard potato mash

Elevate mashed potatoes with a touch of honey mustard for a unique and delicious twist.
Ingredients:
  • 1kg potatoes (see note), peeled, diced
  • 75g butter, chopped
  • 117.50 gm light sour cream
  • 128.75 gm milk, warmed
  • 46.80 gm honey wholegrain mustard
Instructions:
  • Boil potatoes in a pot of salted water on medium-high heat for about 10 minutes or until they are easily pierced with a fork. Drain in a colander.
  • Place the potatoes back into the saucepan over low heat and gently shake for about 30 seconds until any extra moisture evaporates. Remove from heat.
  • Mash potatoes until smooth using a potato masher, adding butter gradually. Mix in sour cream and half of the warmed milk. Beat with a wooden spoon until smooth. Add the remaining milk and beat until fluffy. Season with salt and pepper, then stir in mustard. Serve.
