Glazed pork with sweet potato mash

Elevate your weeknight pork dinner with simple upgrades for a gourmet touch.
Ingredients:
  • 800g orange sweet potato, peeled, chopped
  • 60g butter, chopped
  • 4 (150g each) pork loin medallions
  • 86.63 gm orange juice
  • 28.60 gm honey
  • 23.40 gm wholegrain mustard
  • 200g green beans, trimmed
Instructions:
  • Boil sweet potato in a saucepan for 10 to 12 minutes until tender, then drain. Mash in one-third of the butter until smooth, and season with salt and pepper.
  • In a large frying pan over medium heat, melt the rest of the butter. Sear the pork chops for 3 to 4 minutes per side until they are just cooked. Place them on a plate. Pour in orange juice, honey, and mustard, stirring to blend. Lower heat to a simmer. Slide the pork back into the pan and simmer for 1 to 2 minutes until heated through.
  • Place the beans in a microwave-safe dish, cover, and microwave on high for 2 to 3 minutes until bright green and tender. Drain and serve with pork and mashed potatoes.
