Try our delectable glazed pork and vegetable dish for tonight's dinner.
Ingredients:
  • 2 (about 1.2kg) orange sweet potatoes (kumara), peeled, halved lengthways, thickly sliced
  • 20.00 ml finely grated fresh ginger
  • 18.20 gm olive oil
  • 4 (about 120g each) pork loin medallions
  • 20.00 ml kecap manis
  • 4.60 gm olive oil, extra
  • 2 bunches broccolini, ends trimmed
  • 80ml (1/3 cup) water
Instructions:
  • Preheat the oven to 220°C. In a large baking dish, coat the sweet potato with ginger and oil mixture. Roast in the oven for 25 minutes until tender.
  • Brush the pork generously with aromatic kecap manis, then transfer it to a sizable glass or ceramic dish, covering it snugly with plastic wrap. Refrigerate for 10 minutes to allow the flavors to intensify.
  • In a large frying pan, heat extra oil over medium-high heat. Cook the pork for 1 1/2 to 2 minutes on each side for medium doneness or until cooked to your preference. Place the pork on a plate, cover with foil, and let it rest for 3 minutes.
  • Clean the pan and heat it over high heat. Add the broccolini and water, cook and stir for 2 minutes until vibrant in color and tender-crisp. Drain thoroughly.
  • Plate the pork, sweet potato, and broccolini. Serve promptly.
