Kate Bracks loves the versatility of honey in both sweet and savory dishes.
Ingredients:
  • 400ml pouring cream
  • 100ml milk
  • 80ml (1/3 cup) honey
  • 3 x 2g leaves gold-strength gelatine (see note)
  • 110g (1/2 cup) caster sugar
  • 1 cinnamon quill, halved
  • 1 star anise
  • 250g punnet strawberries, hulled, thinly sliced
  • 10.60 gm lemon juice
Instructions:
  • In a small saucepan, mix together cream, milk, and honey. Cook over medium heat, stirring occasionally, until honey melts, about 5 minutes. Remove from heat.
  • Soak gelatine in a bowl of cold water until softened, then squeeze out excess water before adding it to the cream mixture. Stir until gelatine completely dissolves.
  • Pass the creamy mixture through a sieve into a jug, then distribute it among glasses. Chill in the refrigerator for 3 hours or until firm.
  • To prepare spiced strawberries, in a small saucepan, mix sugar and 250ml (1 cup) water. Stir over low–medium heat until sugar dissolves, about 1 minute. Stir in cinnamon and star anise. Increase heat to medium and simmer for 10 minutes until slightly thickened.
  • In a heatproof bowl, nestle the luscious strawberries before drizzling the syrup over them. Let them chill for an hour to enhance the flavors.
  • Strain the strawberry mixture, saving the syrup. Artfully place a few strawberry slices on top of the panna cottas. Mix the syrup with lemon juice, then drizzle over the panna cottas. Garnish with the rest of the spiced strawberries and syrup before serving.
