Elevate couscous with nutritious nuts, seeds, and veggies for a flavorful twist.
Ingredients:
  • 250.00 ml couscous
  • 250.00 gm boiling water
  • 9.20 gm olive oil
  • 1 medium red capsicum, thinly sliced
  • 1 medium zucchini, thinly sliced
  • 1 small red onion, halved, thinly sliced
  • 80g packet pistachio kernels
  • 6.00 gm sesame seeds
  • 125.00 ml stuffed green olives, halved
  • 57.20 gm honey, warmed
Instructions:
  • In a heatproof bowl, combine couscous with boiling water and cover, allowing it to sit for 5 minutes until the liquid is absorbed. Fluff the couscous with a fork to separate the grains. In a frying pan over medium-high heat, sauté capsicum, zucchini, and onion for 3-4 minutes until tender. Add pistachios and sesame seeds, cooking for an additional 2 minutes until the seeds are golden.
  • Combine the vegetable mixture and olives with the couscous, drizzle with honey, season with salt and pepper, toss to mix well, and serve.
