Elevate any evening with this impressive, flavorful, and healthy dish.
Ingredients:
  • 1 x 250g punnet cherry tomatoes, halved
  • Olive oil spray
  • 300g beef sirloin steak, trimmed
  • 5.00 gm ground cumin
  • 190g (1 cup) couscous
  • 250ml (1 cup) boiling water
  • 150g (1 cup) frozen peas, thawed
  • 60ml (1/4 cup) fresh orange juice
  • 7.20 gm honey
  • 1 small red onion, thinly sliced
  • 125.00 ml fresh mint leaves, torn
  • 35g unsalted pistachio kernels, coarsely chopped
Instructions:
  • Preheat your oven to 180°C. Line a baking tray with non-stick baking paper, then arrange the tomatoes cut-side up on the tray. Give them a good spray of oil and a sprinkle of pepper. Roast for 6 minutes, or until they are tender.
  • Sprinkle half of the cumin over the steak. Heat a large non-stick frying pan over high heat and spray with oil. Cook the steak for 3 minutes on each side for medium doneness, then transfer to a plate and cover with foil. Let it rest for 2-3 minutes before serving.
  • In a heatproof bowl, combine couscous and water, cover, and let sit for 3-4 minutes. Fluff with a fork to separate grains.
  • Boil peas in a saucepan for 1-2 minutes until tender. Then, quickly refresh in cold water and drain.
  • Combine the orange juice, honey, and remaining cumin in a jug, whisking them together. Pour this honey mixture over the couscous, then add the tomato, peas, onion, and mint. Toss everything together until well combined.
  • Slice the steak thinly, then arrange it on top of the couscous mixture in serving bowls. Sprinkle pistachios over the top.
