Elevate steak with Indian-spiced mint and tomato rice.
Ingredients:
  • Large pinch of saffron threads
  • 400g basmati rice
  • 1 cinnamon stick or quill
  • 2 tsp garam masala
  • 42.00 gm lemon juice
  • 18.40 gm vegetable oil
  • 4 Beef Eye Fillet Steaks
  • 200g Perino tomatoes, halved
  • 82.50 ml fresh mint leaves
  • Greek-style yoghurt, to serve
  • Lemon wedges, to serve
Instructions:
  • In a saucepan over medium-high heat, combine water, saffron, rice, and cinnamon. Bring to a boil, season, cover, and simmer for 13 minutes or until the rice is tender. Let it stand covered for 5 minutes, then fluff the rice with a fork.
  • In a bowl, mix garam masala, lemon juice, and oil. Add beef and toss to coat. Heat oil in a chargrill pan on medium-high heat. Cook beef for 3 mins each side or until done. Place on a plate, cover, and let it rest for 5 mins before thinly slicing.
  • Combine the beef, tomato, and mint with the rice. Serve with a dollop of yogurt and lemon wedges on top.
