Whip up quick and delicious honey raisin nut rice in a skillet for a flavorful side dish.
Ingredients:
  • 1 1/3 cups uncooked regular long-grain white rice
  • 2 2/3 cups water
  • 2 tablespoons butter or margarine
  • 1 cup sliced celery
  • 1 large onion, chopped (1 cup)
  • 1 cup walnut halves, coarsely chopped, toasted
  • 2/3 cup golden raisins
  • 3 tablespoons honey
  • 3 tablespoons lime juice
  • 1 tablespoon olive oil
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon freshly ground pepper
  • Celery leaves, if desired
Instructions:
  • Cook the rice in the 2-quart saucepan according to the package instructions. Let it cool completely for about 20 minutes.
  • In a large skillet, melt butter over medium heat. Saute celery and onion until tender. Add rice, walnuts, and raisins, stirring until heated through for about 1 minute.
  • Combine honey, lime juice, oil, salt, cinnamon, and pepper in a small bowl. Pour the mixture over the rice and mix well. Finish by topping with fresh celery leaves. Enjoy warm or at room temperature.
