Honey glazed oven-baked sweet potatoes with a deliciously buttery finish, ideal for pairing with any main dish.
Ingredients:
  • 1 pound red potatoes, quartered
  • 2 tablespoons diced onion
  • 2 tablespoons butter, melted
  • 1 tablespoon honey
  • 1 teaspoon dry mustard
  • 1 pinch salt
  • 1 pinch ground black pepper
Instructions:
  • Preheat the oven to 375°F (190°C) and lightly grease an 11x7-inch baking dish with nonstick cooking spray.
  • Spread potatoes in an even layer in the dish, then layer with onion. In a separate bowl, mix melted butter, honey, mustard, salt, and pepper; pour over the potatoes and onion.
  • Roast in the oven for 35 minutes, or until soft, remembering to stir halfway through cooking.
