Delicious warm honey cakes served with cream or ice-cream.
Ingredients:
  • 180g butter
  • 60g caster sugar
  • 185ml honey
  • 2 eggs
  • 225g self-raising flour
  • 75g plain flour
  • 85g desiccated coconut
  • 125ml thickened cream
  • 185ml milk
  • Shredded coconut
Instructions:
  • Preheat your oven to 160°C. Grease 14 mini loaf pans measuring 14 x 4 1/2cm x 7 1/2cm (base). Cream together butter, caster sugar, and 1/4 cup (60ml) honey until smooth and creamy. Then, mix in the eggs.
  • Combine the flours, desiccated coconut, thickened cream, and milk gently. Transfer into pans, then generously sprinkle with shredded coconut on top.
  • Bake for 30-35 minutes or until a skewer comes out clean. Warm honey and water in a saucepan until runny, then drizzle over the cakes before serving.
