Honey whole wheat cookies with Greek yogurt for a satisfying snack.
Ingredients:
  • 0.66666668653488 cup natural peanut butter
  • 0.5 cup honey
  • 0.25 cup brown sugar
  • 0.25 cup nonfat Greek yogurt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup whole wheat flour
  • 0.5 teaspoon baking soda
  • 0.125 teaspoon salt
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) while preparing a cookie sheet lined with parchment paper or cooking spray.
  • In a large bowl, mix together peanut butter, honey, and brown sugar until creamy using an electric mixer. Add Greek yogurt, egg, and vanilla extract; mix thoroughly. Stir in whole wheat flour, baking soda, and salt until dough is fully combined. Chill dough in the refrigerator for 20 minutes before proceeding.
  • Take a tablespoon of chilled dough and shape it into a ball. Arrange the cookie balls 2 inches apart on the cookie sheet. Use a fork to press down on each ball in a criss-cross pattern.
  • Bake in the oven until the edges are firm and golden brown, about 8 to 10 minutes.
