Indulge in the irresistible sweetness of fresh dates. Whole or chopped, they elevate any treat to a new level of deliciousness.
Ingredients:
  • 180g (2 cups) whole rolled oats
  • 75g (1/2 cup) plain flour
  • 60g (1/2 cup) chopped walnuts
  • 8 fresh dates, pitted, cut into 1cm pieces
  • 100g butter, melted, cooled
  • 80ml (1/3 cup) honey
Instructions:
  • Preheat your oven to 180°C and line 2 large baking trays with non-stick baking paper. Mix oats, flour, walnuts, and dates in a large bowl.
  • Whisk the egg gently in a small bowl, then incorporate the butter and honey.
  • Combine the honey mixture with the oat mixture until fully incorporated. Spoon heaped tablespoonfuls of the mixture onto the lined trays and gently press to slightly flatten.
  • Bake until light golden for about 12 minutes. Allow to cool on the trays for 5 minutes before transferring to a wire rack to cool completely.
