Try a fresh mint marinade to elevate your BBQ chicken with a unique twist!
Ingredients:
  • 1/4 cup white vinegar
  • 1/4 cup extra virgin olive oil
  • 1 (4 to 5) pound chicken, cut into parts
  • Kosher salt
  • Freshly ground black pepper
  • 1/2 cup honey
  • 2 to 3 tablespoons water
  • 1/2 cup chopped fresh mint (or 2 tablespoons dried mint)
Instructions:
  • Prepare the chicken marinade by combining vinegar and olive oil in a bowl. Pour the marinade over the chicken pieces in the bowl and thoroughly coat them by turning. Let the chicken marinate for 30 minutes to an hour.
  • Prepare the honey mint glaze by combining honey, fresh mint, and a splash of water in a small bowl until it reaches a basting consistency. Keep it aside to glaze the chicken later.
  • Preheat the grill to medium-high heat.
  • Prepare and grill the seasoned chicken: Take the marinated chicken out and generously season it with salt and pepper. Put the chicken on the hot grill, skin side up. Grill covered, turning every 7 to 8 minutes, for about 25 to 40 minutes until fully cooked.
  • During the final 5 to 10 minutes of cooking, brush all sides generously with the delectable honey mint glaze. Ensure the chicken is fully cooked by checking that the juices run clear when both the breast and thigh are pierced with a knife and the temperature reads around 165°F. Keep in mind that the breast pieces might be done sooner than the thighs due to their size discrepancy.
