Honey-Spiced Chicken with Orange Sauce

Prepare a flavorful Jewish honey-glazed chicken dish.
Ingredients:
  • 2 tablespoons vegetable oil
  • 1 cut-up whole chicken (3 to 3 1/2 lb)
  • 2 medium onions, sliced
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/8 teaspoon pepper
  • 1 cup orange juice
  • 1/4 cup honey
  • 2 tablespoons lemon juice
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup pitted ripe olives
  • 1 tablespoon cold water
  • 2 teaspoons cornstarch
  • Orange slices, if desired
Instructions:
  • In a large skillet or Dutch oven, warm oil over medium heat. Add chicken pieces and cook for about 15 minutes, turning occasionally, until browned all over.
  • Preheat the oven to 350°F. Arrange chicken in a 11x7-inch (2-quart) glass baking dish. Layer onion slices on top of the chicken. Season with salt, paprika, and pepper. In a small bowl, combine orange juice, honey, lemon juice, ginger, and nutmeg; pour over the chicken. Sprinkle olives on top. Cover the dish with foil before baking.
  • Bake for 45 to 60 minutes, or until the thickest piece of chicken reaches 170°F for breasts or 180°F for thighs and drumsticks, and the juices run clear.
  • Place the chicken, onions, and olives on a platter. Transfer the pan juices to a 1-quart saucepan and bring to a boil. In a small bowl, combine water and cornstarch, then add to the boiling juices. Stir constantly and continue boiling for 1-2 minutes until slightly thickened. Garnish the chicken with orange slices and serve with the flavorful orange sauce.
