Honey-glazed pork

Enhance pork's flavor with a sweet and simple honey marinade.
Ingredients:
  • 46.80 gm Dijon mustard
  • 57.20 gm honey
  • 20.00 ml kecap manis
  • 1/2 tsp finely chopped garlic
  • 1/2 tsp chopped fresh rosemary leaves
  • 1/2 tsp fresh lemon thyme leaves
  • White pepper, to season
  • 2 (about 500g) pork fillets, excess fat trimmed
  • Steamed white rice, to serve
  • Steamed baby pak choy, to serve
Instructions:
  • Mix together mustard, honey, kecap manis, garlic, fresh rosemary, and lemon thyme in a glass or ceramic bowl. Season generously with pepper. Add the pork and make sure it is well coated. Cover with plastic wrap and chill in the fridge for 2 hours to let the flavors meld.
  • - Preheat your oven to 180C and line a baking pan with non-stick baking paper. - Place a roasting rack in the pan. - Drain the pork, saving the marinade. - Put the pork on the rack and bake for 40 minutes or until fully cooked. - Transfer the pork to a plate, cover it with foil, and let it rest for 5 minutes. - Slice and serve the pork.
  • In a small saucepan, gently heat the reserved marinade over medium heat until it comes to a boil. Let it simmer for about 1 minute until it slightly thickens. Serve the rice, pork, and baby pak choy on individual plates and generously drizzle with the marinade.
