Delicious honey lime chicken enchiladas with gooey asadero cheese for a flavorful Mexican meal.
Ingredients:
  • 2 cooked chicken breast halves, shredded
  • 0.33333334326744 cup honey
  • 0.25 cup freshly squeezed lime juice
  • 2 teaspoons chili powder
  • 2 teaspoons minced garlic
  • 1 (14 ounce) can green enchilada sauce
  • 0.5 cup heavy whipping cream
  • 12 corn tortillas
  • 2 cups shredded queso asadero (white Mexican cheese)
Instructions:
  • Transfer the shredded chicken to a bowl.
  • Combine honey, lime juice, chili powder, and garlic in a bowl and whisk together. Pour the marinade over the chicken and toss until well coated. Refrigerate for at least 30 minutes to marinate.
  • Preheat the oven to 350°F (175°C) for the perfect baking temperature.
  • Combine enchilada sauce and cream in a shallow bowl. Dip each tortilla in the mixture and layer them in a 9x13-inch baking dish until the bottom is fully covered.
  • Layer half of the chicken mixture over the dipped tortillas. Sprinkle one-third of the queso asadero on top. Dip more tortillas in enchilada sauce and arrange over the cheese. Spoon 2 to 3 spoonfuls of the sauce over the tortillas. Repeat layering with the rest of the ingredients, ending with a layer of dipped tortillas. Pour any leftover enchilada sauce over the top and sprinkle the remaining queso asadero.
  • Bake in the preheated oven for around 30 minutes until the cheese is melted and golden, and the dish is heated through.
